Four Steps to Make Homemade Winter Melon Syrup (Method, Proportion, and Tips)
1. Proportion for Cooking Winter Melon Concentrate
The ratio of winter melon tea bricks to water is 1:1, meaning 1 gram of winter melon tea bricks pairs with 1 c.c. of water.
HERJYI’s winter melon tea bricks come in two sizes, and the recommended water amounts are as follows:
- 500g of tea bricks with 500c.c. of water
- 200g of tea bricks with 200c.c. of water
2. Method for Cooking Winter Melon Concentrate
(1) Place the winter melon tea bricks and cold water into a pot.
(2) Cook over medium-low heat, stirring occasionally, but avoid excessive stirring (to prevent burning the bottom).
(3) Cook until the tea bricks are fully dissolved, then turn off the heat. This takes about 20-30 minutes.
(4) After cooling, store the concentrate in the refrigerator.
Rice Cooker Version
(1) Place the winter melon tea bricks and cold water into the inner pot.
(2) Add 2 cups of water to the outer pot.
(3) Wait for the cooker to switch off (approximately 20 minutes).
(4) Open the lid and stir to check if the tea bricks have completely dissolved.
If they haven’t dissolved, stir until fully melted, or add more water to the outer pot and cook again.
(5) Once done, allow the mixture to cool, then store it in the refrigerator.
3. Important Notes for Cooking Winter Melon Syrup
Q1. How to cool the winter melon syrup?
(1) Water bath cooling:
Place the pot in a cold water bath. Monitor the temperature of the winter melon concentrate, and once it drops to 50°C, immediately refrigerate it.
(2) Fan cooling:
Leave the winter melon concentrate at room temperature and use a fan to cool it down to 50°C. Then, immediately refrigerate it.
This method is slower and more cost-effective, but it’s prone to dust or insects falling in, so it’s better to use a breathable cover.
Q2. How long can the cooked winter melon syrup be stored?
HERJYI’s winter melon tea bricks contain no preservatives, so it is best to consume the syrup within 7-10 days for optimal flavor.
Make sure that the container used for storing the winter melon syrup is completely dry.
