Method for Making Plum Wine with Rock Sugar

Steps for Making Lightly Pickled Rock Sugar Plum Wine:

1. Wash the glass jar thoroughly and disinfect it with alcohol (do not use hot water as it may crack the jar).

2. Select the plums, removing any damaged or rotten ones.

3. After washing the plums, remove the stems (if not cleaned properly, the plum wine may turn bitter).

4. Lay the plums flat to air dry (you can also use a fan to speed up drying).

5. Add the plums, rock sugar, and liquor into the jar in sequence, then seal the jar!

(Do not shake the jar, and store it in a cool, dark place.)

After about 4-6 months, the plum wine will be ready to drink. If you prefer a stronger plum flavor, let it steep longer.


Tips for Making Plum Wine:

  1. Remove any damaged plums and clean the stems thoroughly to avoid contamination from bacteria during fermentation.
  2. Ensure all containers and tools are disinfected and completely dry to prevent mold growth.
  3. Use a wide-mouth container and leave about 30% of space to prevent liquid leakage during fermentation.
